Hello Friends,
The sage in my garden is still looking good so I thought I would try Lidia's Butter, Fresh Sage and Walnut Sauce, which comes together in just five minutes. I hardly needed to make any changes to make it super high in Omega-3s. The dishy is rich, nutty, complex and I'd be happy serving it to family or guests. All it really takes is garden sage and a good parmesan.
Ingredients for 1 pound of pasta:
8 tablespoons of Grass-Fed Butter (or 6 Tablespoons of Butter and 2 Tablespoons of canola oil for extra Omega-3s)
6-8 fresh sage leaves
1 cup chopped walnuts, 1/8-1/4 inch pieces
1 cup freshly grated parmesan
Instructions
Melt the butter (or the butter and canola oil) over medium-high heat in the skillet and scatter the sage leaves around the pan. When the butter begins to sizzle, drop the walnuts in a hot spot. Toast them, stirring them in the butter for a minute or so, until they start to turn light brown.
Ladle in 1 cup of the pasta cooking water. Cook the sauce at an active simmer for about 3 minutes to develop flavor and thicken the sauce. Add the cooked pasta to the pan and toss over low heat. Serve with the freshly-grated parmesan.
This kind of pasta is known as pasta nada because it comes together with so few ingredients. But less, in this case, is more! Enjoy.
